Of course, if you throw together a few tomatoes and vegetable stock every day, then soup is indeed “just soup”. But there is so much more to discover.
With a few small changes, an ordinary soup suddenly becomes a fantastic lunch. If you combine that with a delicious slice of fresh sourdough bread

For this not-so-average tomato-paprika soup we use a leftover peperonata and an extra beef burger (for turning into balls) from the day before.
That pepperonata is a Sicilian topper that we recently shared.
That fantastic peperonata gives an extra dimension to the soup. A bit of sweetness and a bit of sourness.

Ingredients:
- 3 Paprika
- 1 Point bell pepper
- 1 Onions
- 2 clove Garlic
- White wine vinegar
- 1 tsp Sugar
- 700 g diced tomatoes
- Olive oil
- Vegetable stock
- Basil (fresh)
- 30 g Rocket
- 2 tbs Parmesan cheese
- 2 hamburger
