For the #s72challenge I developed a recipe in which meat from Atelier Francois is combined with s72 Gin. The gin is made with violet and heather flower, among other things. These flowers clearly come into their own in the smell and taste of this gin.

• 330 ml Water
• 3 tbs Rice vinegar
• 2 tbs Sugar
• 1 tbs Gin
• 1 tsp Salt
• 200 g Filet mignon
• Tarragon (fresh)
• Soy sauce
