Okonomiyaki is a Japanese savory pancake. I made the Osaka variant, where you mix the ingredients beforehand.
Normally you finish the pancake with beni shoga (pickled ginger), but I replaced that with fermented white cabbage. So tasty!

Ingredients:
- 160 g Self-rising flower
- 1 tsp Baking powder
- 1 tsp Salt
- 1 tsp Sugar
- 80 g Yamaimo
- 500 g Oxheart cabbage
- 4 Spring onion
- 8 tbs Fried onion
- 4 Eggs
- 12 slice Katenspek
- 5 g Kombu
- 10 g Katsuobushi
- 500 ml Water
- 50 ml worcestersaus
- 50 ml Soy sauce
- 50 ml Water
- 2 tbs Mirin
- 1 tbs Sugar
- 1 tbs Rice vinegar
- 1.5 tsp Ginger
- 1 tsp Maizena
- Katsuobushi
- Aonori
- Sauerkraut
- Mayonnaise
