So it is a vegetarian vitello tonnato. Note: in this recipe I do use tuna sauce and anchovies, but feel free to replace the fish with a vegetable variant to make it 100% vegetarian.

- 500 g Flour
- 250 g Coarse sea salt
- 1 Eggs
- 250 ml Water
- 500 g Red Beets
- 100 g canned tuna
- 4 tbs Mayonnaise
- 2 anchovy fillets
- 1 tbs Capers
- 8 Apple capers
- Croutons
- Rocket
