Ingredients:
- 600 g Entrecote van een kwalitatief rundvlees
- 50 g honing
- 5 cl balsamicoazijn
- 200 ml Lacroix rundsfond
- Sesamzaadjes
- 1 l water
- 30 g katsuobushi gedroogde bonitovlokken
- 2 gedroogde zeewier vellen
- 400 ml Lacroix Runderfond
- 600 ml groentenbouillon
- 400 g udon noedels gedroogd gewicht
- 1 puntpaprika fijn gesneden
- Lenteuitjes fijn gesneden
- zachtgekookt ei
- Sushi gember (naar smaak)
- 4 kleine Kombu vellen
- 400 g Shiitake
- 3 tbs Fish sauce
- 50 ml neutrale oliebijvoorbeeld zonnebloemolie
- 2 clove knoflook fijngehakt
- 1 tbs gember fijngehakt
- 1 tbs rode chili vlokken
- 2 stuks chili peper
