Plus, I added some extra Mediterranean vegetables and some red pesto. That way you need a little less rice to still have a filled dish.

- 125 g Risotto rice
- 250 g Scampi
- 1 shallots
- 1 clove Garlic
- 1 Courgette
- 1 Red pepper
- 500 ml Vegetable stock
- 1 tbs Red Pesto
- 25 ml Soja cream
- 25 g Parmesan flakes
- Pepper
- Salt
- Provencal herbs
