- 8 g Cane sugar

- 200 g chicken liver
- 2 shallots
- 0.5 Lemon
- 200 g Chestnut mushrooms
- 400 g Pork loin
- 200 g bacon cubes
- 2 Chicken breasts
- 20 ml Madeira
- 15 ml Cognac
- 3 g Cane sugar
- 3 Thyme (fresh)
- 100 g Pistachio notes
- 0.5 Bunch of parsley
- 2 Egg whites
- 12 g Gelatine sheets
- 180 ml Madeira
- 1 Eggs
- Pickles
- Mustard
